The recipe for success of our chef de cuisine Peter Lassnig sounds so easy: “Not opulence is memorised by our senses but plainness and reduction. This is exactly what we want to realise in our kitchen. At the same time we do not make compromises in quality. Just as you can look to the bed of a clear mountain river, we also want our guests to be able to taste every ingredient, every spice and every herb. And we know that nothing is more challenging and labour-intensive than reduction.”
